Easy Baked Parmesan Zucchini and Squash Casserole for summer veggies

Do you have a lot of zucchini and squash coming in from your garden? This is my go to veggie dish I use to make my baked Parmesan Zucchini and Squash casserole. Since I made this dish one day, it has now become the family favorite and side dish to bring to a pot luck.

It’s super simple and can be prepared ahead of time. Plus it gives you a nice alternative to your common veggie sides.

Ingredients needed to make this casserole are…

  • Zucchini
  • Squash
  • Onion
  • Garlic
  • Butter
  • Garlic Parmesan seasoning ( I use the Weber brand)
  • Garlic and Onion powder
  • Black Pepper
  • Parmesan cheese

And of course you’ll need a baking dish. For this recipe, a 9×9 baking dish will do just fine. Dice up your onion and garlic and spread on the bottom of your baking dish.

Depending on how many people you are feeding depends on how many zucchini and squash you are going to use. I typically use about two zucchinis and two squash to feed the four of us.

I then slice them up and place them on top of the bed of onion. Continuing until my dish is full. You do want to have a little wiggle room between slices so your seasoning can get down below.

Cooking tip- If you’d like an even spread of seasonings, grab a small bowl and add all the seasoning mix to it first. Giving it a good stir, then apply to dish.

Then you’ll grab all of the seasonings and sprinkle the flavor on top. Next is adding pieces of butter all over. Add the Parmesan Cheese on top.

Cover the dish with tinfoil on top and place in the oven for 25 minutes on 350 degrees. Once your time is done, remove tinfoil and place under the broiler for 2-3 minutes to give your veggies a nice toasted color.

What to serve with this Baked Parmesan Zucchini and Squash Casserole?

This casserole really pairs well with just about any dish.

  • Grilled chicken or steak
  • Burgers ( Did I mention we have an Instant Pot Burger recipe?)
  • Fish, like salmon or tilapia
  • Baked chicken legs

If you’re grilling outside, go ahead and add this to the grill instead of the oven for a more smoked flavor.

What’s the best side item to compliment this dish?

The best side item that pairs amazing with this casserole would be some mashed potatoes. If you haven’t had this combination before, you are missing out.

Could definitely add some carrots for more veggie options and some baked beans for added protein.

Ingredients

  • 2 Squash sliced
  • 2 zucchini sliced
  • 1 small onion chopped
  • 2 tbsp garlic minced
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 4 tbsp Garlic Parmesan seasoning
  • 4 tbsp butter
  • 4 tbsptbsp Parmesan cheese
  • 1 tsp black pepper

Instructions

  • Spray your baking dish with oil. Preheat your oven to 350°.
  • Wash your veggies and peel your onion.
  • Slice your zucchini and squash. Chop your onion.
  • Add your chop onion to the bottom of your baking dish.
  • Transfer your sliced zucchini and squash onto of your bed of onions.
  • Add 2 tbsp of garlic onto and in between your sliced veggies.
  • Add your garlic powder, onion powder, black pepper, and garlic parmesan on top of the veggies.
  • Add your butter ontop arranging in different places. Next add your parmesan cheese all over.
  • Cover and bake for 20 minutes.
  • Uncover and bake for a few more minutes allowing the top to brown a little.
