Instant Pot Porcupine Balls

Enjoy these homemade Porcupine Balls cooked to perfection inside the Instant Pot.

Ingredients

  • 1 lb Ground Beef
  • 1 lb Ground Pork sausage
  • 2 eggs
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Minced Garlic
  • 1 tbsp Dried mined Onion
  • 1 tsp Black Pepper
  • 1/2 tsp Salt
  • 4 tbsp Italian Seasoning
  • 1 cup Minute White Rice
  • 1 can Rotel Tomatoes with juice
  • 2 cans Tomato Sauce
  • 2 cups Water
  • 3 tbsp Italian Seasoning for the sauce

Instructions

  • Break the eggs and mix first.

  • Add the meats, Worcestershire sauce, seasoning, garlic, onion, and rice to bowl.
    1 lb Ground Beef, 1 lb Ground Pork sausage, 2 tbsp Worcestershire Sauce, 1 tbsp Minced Garlic, 1 tbsp Dried mined Onion, 1 tsp Black Pepper, 1/2 tsp Salt, 4 tbsp Italian Seasoning, 1 cup Minute White Rice
  • Mix ingredients well and place bowl into icebox for about 5 minutes. Long enough for the mixture to get cold and hold its shape.
  • Take the mixture out and start forming into balls. Each one should be about inch to inch in a half for size. Place them onto a baking pan and return to the icebox for another 5 minutes
  • After the time is up, take them out of the icebox and transfer them into the Instant Pot. You can stack them, it will be fine.
  • Add in the remaining ingredients on top of the Porcupine Balls.
    1 can Rotel Tomatoes, 2 cans Tomato Sauce, 2 cups Water, 3 tbsp Italian Seasoning
  • Press the "Pressure" cook setting and set the time to 15 minutes. Set the pressure to high and if you have the Instant Pot Max, set the pressure release to quick release. If you have the regular Instant Pot, you will need to manually release the pressure as soon as the time is up.
  • Once the time is up, and it has released the pressure, open the lid, give it a good stir and serve it up.

Notes

For the rice, if all you have is regular white rice, that will work too. I'd just recommend adding 5 more minutes to the cook time. 
You can also take the pork out of this recipe and just use all beef if you prefer. The flavor is still amazing.
