Instant Pot Taco Pasta to satisfy both cravings in one dish.

Instant Pot Taco Pasta for those nights you want tacos and pasta. Its the best of both worlds.

I was really wanting some tacos tonight but of course I didn’t have the shells nor the extra topping ingredients to complete the taco craving. But I did have pasta shells and the meat and cheese.

So Instant Pot Taco Pasta was born. This is also another layering ingredients kind of recipe, so you’ll just dump and cook.

I must confess, I really do love my Instant Pot Max. It’s hands down the best Christmas present I have asked for. I cook in it almost everyday and its the most used kitchen appliance I have besides the icebox.

Pasta Ingredients

You’ll need the following ingredients

  • 1½ lbs of Ground meat
  • 1 bx of Elbow Pasta
  • 2 cans of Tomato Sauce
  • 1 can of Corn
  • 3 cups of water
  • 1 can of Rotel Tomatoes
  • 1 can of Black Beans
  • Minced Garlic
  • Minced Onion
  • Taco Seasoning
  • Salt and Pepper

Press the saute function on the Instant Pot and brown your ground meat. Add in the taco season, garlic, onion, salt and pepper. Finish cooking the ground meat.

Turn the saute mode off. Add 1 cup of water and scrap around the bottom of your pot. Make sure to get all the brown bits up off of the pot.

If you skip this step your Instant Pot will give you a burn notice during cooking and this is what it will be referring to.

Time to layer your ingredients.

Next add in your uncooked pasta. Do not stir, just lay it on top of your ground meat.

Add in your remaining ingredients having your tomato sauce be the last to add. I like to sprinkle a little bit more of Taco Seasoning to the top.

Close and secure your lid. Press the pressure cook setting, set the timer to eight minutes on high pressure, and then do a quick release.

If you do not have the Max, you will have to manually vent the steam after the eight minutes. Be careful when doing this.

Carefully remove the lid and you have a soupy mess.

Finish cooking taco pasta

Stir the pasta until everything is mixed together. I like to add cheese to this dish but its totally optional.

Now enjoy this new family favorite weeknight dish. You can also serve this dish with a few drizzles of taco sauce on top to really up the flavor.

  • Instant Pot 6qt

Ingredients

  • lbs Ground meat
  • 1 Can corn drained
  • 1 Can rotel tomatoes
  • 1 Can black beans drained and rinsed
  • 2 Cans tomato sauce
  • 1 Bx Elbow pasta uncooked
  • 3 cups water
  • 3 tbsp Taco Seasoning
  • ½ cup minced onion
  • 1 Tbsp minced garlic
  • 2 Tsp salt
  • 2 Tsp pepper
  • 2 Tbsp vegetable oil

Instructions

  • Turn on the sauté function on the Instant Pot and add your vegetable oil.
  • Add your ground meat, onion, garlic, seasonings and cook until your meat is mostly brown. Its ok if you have some pink, it'll finish cooking later.
  • Turn off the sauté function and add 1 cup of water. Scrap up any brown bits stuck to the bottom.
  • Start layering your ingredients. Do not stir.
  • Add your pasta first, then add your corn, beans, rotel tomatoes, and tomato sauce.
  • Add your remaining water and Taco seasoning. Close and secure your lid.
  • Set your Instant Pot to pressure cooking. Set the timer to 8 minutes and do a quick release.
  • After it finishes cooking lift your lid and stir everything together.
  • Add cheese if desired, serve and enjoy.

Notes

This is a great recipe to have precooked ground meat frozen. Just dump your frozen meat and ingredients together and cook as instructed. 
If you do not scrap up your brown bits from sautéing your meat, the Instant Pot will give you a burn notice.
