How to make Porcupine Meatballs Using Instant Pot

Learn to make these easy Instant Pot Porcupine Meatballs for a delicious homemade meal.

Hello everyone, today I’m sharing an easy recipe that’ll quickly make its way to your favorite weeknight meals called Porcupine meatballs.

Now their is no actual Porcupine used in this recipe. It’s only called this because the rice we add to the meatballs gives it the appearance of little Porcupine spikes.

What better way to make this an easy meal then to use our Instant Pot Max. Get the prep work done ahead of time and you could just dump and cook this meal one evening.

Ingredients needed to make Porcupine meatballs are…

  • Ground meat (I used 1 lb of beef and 1 lb of pork sausage)
  • Eggs
  • Worcherstire Sauce
  • Garlic
  • Onion
  • Black Pepper
  • Salt
  • Italian Seasoning
  • Rice
  • Water
  • Rotel tomatoes
  • Tomato sauce

Mix everything together, leaving the last three ingredients out.

Shape into your desired size ball, then place onto a sheet pan.

Allow the Porcupine balls to stay in the freezer for at least five minutes. This will make them keep their shape instead of falling apart.

Remove them from the freezer and place inside the Instant Pot. It’s ok if you stack them.

Add the water, Rotel tomatoes with juice, and Prego sauce on top of the Porcupine balls.

Place and secure the lid closed. Hit the Pressure cook button, set the time to 15 minutes. Select high pressure and if you have a Max, select the quick release option for the steam.

Wait till the amazing Instant Pot Max is done cooking and has released all the steam. Twist and open the lid away from your face. Place the lid in the side holder.

If you do not have a Max, you’ll need to manually release the pressure by turning the knob on the lid. Once it’s done releasing the steam, then carefully open your lid.

Gently stir the sauce and meatballs around a little then serve.

This is an excellent meal option for Baby Led Weaning for the baby.

What to pair with Porcupine meatballs?

You can pair these meatballs with anything really. They can be the main entrée with sides like..

  • Mashed potatoes
  • Veggies
  • Mac and cheese
  • Beans

And can even be made into a sandwich with mozzarella cheese on top.

Or they can be a side item to accommodate steak, chicken, or pork. Or into appetizers for a party.

Can this be made ahead of time?

Of course, this dish can made into a freezer meal for a future easy go-to meal.

Just follow the directions for making the meatballs, but allow them to sit in the freezer a little longer (15 minutes). Then transfer them to a freezer bag.

Add the remaining ingredients when your ready to cook them and set the timer to 22 minutes instead of 15 minutes if they are still frozen.

Ingredients

  • 1 lb Ground Beef
  • 1 lb Ground Pork sausage
  • 2 eggs
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Minced Garlic
  • 1 tbsp Dried mined Onion
  • 1 tsp Black Pepper
  • 1/2 tsp Salt
  • 4 tbsp Italian Seasoning
  • 1 cup Minute White Rice
  • 1 can Rotel Tomatoes with juice
  • 2 cans Tomato Sauce
  • 2 cups Water
  • 3 tbsp Italian Seasoning for the sauce

Instructions

  • Break the eggs and mix first.

  • Add the meats, Worcestershire sauce, seasoning, garlic, onion, and rice to bowl.
    1 lb Ground Beef, 1 lb Ground Pork sausage, 2 tbsp Worcestershire Sauce, 1 tbsp Minced Garlic, 1 tbsp Dried mined Onion, 1 tsp Black Pepper, 1/2 tsp Salt, 4 tbsp Italian Seasoning, 1 cup Minute White Rice
  • Mix ingredients well and place bowl into icebox for about 5 minutes. Long enough for the mixture to get cold and hold its shape.
  • Take the mixture out and start forming into balls. Each one should be about inch to inch in a half for size. Place them onto a baking pan and return to the icebox for another 5 minutes
  • After the time is up, take them out of the icebox and transfer them into the Instant Pot. You can stack them, it will be fine.
  • Add in the remaining ingredients on top of the Porcupine Balls.
    1 can Rotel Tomatoes, 2 cans Tomato Sauce, 2 cups Water, 3 tbsp Italian Seasoning
  • Press the "Pressure" cook setting and set the time to 15 minutes. Set the pressure to high and if you have the Instant Pot Max, set the pressure release to quick release. If you have the regular Instant Pot, you will need to manually release the pressure as soon as the time is up.
  • Once the time is up, and it has released the pressure, open the lid, give it a good stir and serve it up.

Notes

For the rice, if all you have is regular white rice, that will work too. I’d just recommend adding 5 more minutes to the cook time. 
You can also take the pork out of this recipe and just use all beef if you prefer. The flavor is still amazing.
