Welcome my friends, I’m finally sitting down and sharing my homemade Mexican Rice recipe with you. This is something I have been perfecting every Tuesday night for Taco Night, and I think I have found the perfect amount of each ingredient to make it spot on every time I cook it. If you’ve ever wondered how to make that perfectly fluffy, vibrant Mexican rice served at your favorite restaurant, this is the recipe for you! This easy homemade Mexican rice is full of authentic flavor, made with pantry staples, and comes together in under 30 minutes. Whether you’re serving tacos, enchiladas, or grilled chicken, this classic side dish is a must.

And don’t worry, all the ingredients you’ll need for this recipe you probably already have in your kitchen, so no need to worry about weird or one time use ingredients here.

Ingredients needed to make this Mexican side dish are…

You’ll also need a sauce pan, I like to use my stainless steel pan for this dish. A measuring cup, knife, chopping board, and stirring spoon.

First thing we need to do is warm up our skillet with the oil. Once its ready, add in your onion and garlic. Saute for a few minutes then add in your uncooked rice and seasoning.

Saute the rice just for a little bit, it will change its look a bit, then add in your half a can of tomato sauce and your water with the cubes dissolved. Let it come to a boil, stir, and remove from the heat, adding the lid and allowing it to sit for about fifteen minutes. Once the time is up, fluff the rice and serve.

You can add this to any Mexican dish you can think of. This rice goes perfectly with:

  • Chicken or Beef enchiladas
  • Carnitas tacos
  • Grilled fajita vegetables
  • Burrito bowls
  • Nacho platter night
  • Salads

You can easily store this for a few days in an airtight container or freeze for the future. When you bring it out of the freezer, just add a few drizzles of water on top before adding it to the microwave for reheating. This will help add moisture back to the rice and make it fluffy Mexican rice again.
